Maine Cuisine – Mark Gaier & Clark Frasier – Arrows

Mark Gaier and Clark Frasier met in 1985 while cooking at Jeremiah Tower’s Stars restaurant in San Francisco. Gaier was a pre-pharmacy major and Frasier had studied Chinese and foreign policy. But both “had cooked on the side, to pay the rent,” Frasier says. At Stars they became “tremendously excited and inspired” by what they experienced in the kitchen. They determined to open a restaurant together. When they saw a handhewn 1765 farmhouse in Ogunquit in 1988, “it spoke to us.” But in those days, the culinary scene in Maine was “bleak,” Frasier recalls. They couldn’t find good olive oils or decent bread or bright, fresh organic greens anywhere. So, out of necessity, they began growing or making as many primary ingredients as they could. Today patrons come to stroll through their lush gardens and enjoy the rustic but elegant ambiance of what Bon Appétit magazine called “one of the ten most romantic restaurants in the US” In 2006 Gourmet ranked Arrows #14 of “America’s Top 50 Best Restaurants.” And Gaier and Frasier have been finalists four times in the James Beard competition for Best Chef in the Northeast. People often ask, “What is acupuncture?” Acupuncture is one part of Chinese medicine. Acupuncture has been around for thousands of years. Acupuncture is based on the concept of Qi and Qi means energy. The Qi is flowing through our body in rivers that are called meridians in Chinese medicine. Basically, what acupuncture is doing is inserting needles at different points of these meridians to flip open and closed valves to regulate the flow of the energy of the Qi. The acupuncture needles are so tiny that they are bendable. They are almost the thickness of a human hair. So that’s acupuncture. Let’s talk about rashes. Rashes can be caused by the immune system, certainly are a sign of inflammation that’s happening in the body, and there are many triggers, including stress. There can also be food triggers, the digestive system is also critically involved with the skin, and there are also topical triggers such as metals or certain soaps, shampoos, laundry detergents and many other topical items. When we use acupuncture to treat rashes, it’s less important what the

Acupuncture is based on the concept of Qi and Qi means energy. They flow on the top of our head, on the bottom of our feet. Basically, what acupuncture is doing is inserting needles at different points of these meridians to flip open and closed valves to regulate the flow of the energy, of the Qi. Just like rivers out in nature, if a tree falls down and blocks that river, things that depend on that water that are downstream from that would start to get impaired function because they’re not getting the water supply. So things that are downstream from the blockages of Qi in our body also get an impairment in function. Acupuncture Keeps the Rivers of Energy Open If the rivers of energy that are flowing to our eyes get impaired flow, then we can get macular degeneration or blurred vision, or if the rivers that flow to our head get impaired, then we can get depression or anxiety, or insomnia. So that’s acupuncture

In Western medicine, there are dozens and dozens of possible causes for headaches. Some of the contributing factors to these imbalances include dehydration, hormone imbalances, a toxicity reaction or a detox reaction, a food or environmental allergen, the muscles in the back of the neck that go into a spasm, certainly stress plays a huge role when it comes to headaches, and the blood vessels inside the head can dilate and contract, and that also is a cause.
